The 3rd International Yale Symposium on Olive Oil & Health was held in Jaén, Spain, co-hosted by the University of Jaén and the Center for Advanced Studies on Olive Groves and Olive Oils.
The opening ceremony was chaired by the Rector of the University of Jaén, Juan Gómez Ortega, and speeches were given by the president of the Provincial Council of Jaén, Francisco Reyes; the sub-delegate of the Government of Jaén, Catalina Madueño; the territorial delegate of Agriculture, Livestock and Fisheries of the Junta de Andalucía, Soledad Aranda; the mayor of Jaén, Julio Millán; the head of the Department of Environmental Health Sciences (Yale School of Public Health), Vasilis Vasiliou; the Deputy Executive Director of the IOC, Jaime Lillo (copied); member of the organising committee of the symposium, Tassos Kyriakides; and the mayor of the city of Delphi (Greece), Panagiotis Tagkalis, where the 2nd International Yale Symposium took place.
All participants noted the importance of exercise and nutrition, including a considerable amount of EVOO, even for treatments for cancer. This showed us that, while many studies have been done, there is still much to learn about the positive effects of olives and olive oil on human health.
