عملية حرارية تُطبق في درجة حرارة أكثر من 100 درجة مئوية، من أجل القضاء على جميع أشكال الحياة، بما فيها البوغ. وهو مصطلح مُطلق ينطوي على فقدان قابلية الحياة أو القضاء على جميع الكائنات الحية الدقيقة التي توجد في غذاء ما، حيث تُهيأ بهذه الطريقة التي تمنع تلوثها اللاحق.
