Every year, the IOC holds intercomparison trials for physico-chemical and sensory analysis. Several laboratories took part in the most recent intercomparison trial for the period 1 December 2021 to 30 November 2022. Successful laboratories are granted official recognition to conduct the physico-chemical analysis of olive oils on the basis of Decision No. DEC-III.2/109-VI/2019. There are three types of recognition:
- Type A recognition: basic testing
- Type B recognition: advanced purity analyses, which also includes quality parameters
- Type C recognition: the analysis of residues and contaminants
The IOC also holds two tests to check the proficiency of these laboratories in applying the IOC method for the organoleptic assessment of virgin olive oil in accordance with decision No. DEC-13/103-V/2015.
