“Tomorrow Tastes Mediterranean”, a flagship culinary conference organised by the Torribera Mediterranean Center (TMC), is taking place in Barcelona, Spain, on the 27th and 28th of November, 2023. It aims to support the culinary industry to better understand the Mediterranean Diet through its health and sustainability attributes, as well as its cultural principles, and to introduce these into the 21st century kitchens.
This conference is organised by the TMC which is a joint project of the University of Barcelona and the Culinary Institute of America (CIA), with whom the International Olive Council (IOC) collaborates on a variety of projects, such as the “Olive Oil and the Plant-Forward Kitchen” initiative.
On this occasion, the IOC is represented by the Organisation’s soon-to-be Executive Director Jaime Lillo, who presented at the 9th session of the conference on the theme “From culinary interactions to nutritional synergies: next-generation research on the Mediterranean kitchen” (27 November 2023).
Imene Tribelsi, Head of the IOC’s Promotion Department, will also be moderating the 4th workshop on the subject “North Africa – The vegetable kitchen revealed” (28 November 2023).
The event is also attended by Yousra Antit, Head of the Olive Oil Chemistry Department, as part of the follow-up to the IOC’s collaboration with the CIA and the TMC through its Standardisation and Research Unit.
